Masticar: la primera feria de grandes chefs

Esto sucedió en Brunch, el desayuno almuerzo de Metro 95.1: hay un furor por las ferias de alimentos en Buenos Aires, no sólo las barriales. El próximo fin de semana una asociación de cocineros y empresarios ligados a la gastronomía realizan Masticar, su primera feria curada por chefs, bajo el lema “Comer rico hace bien”. Para saber un poco más, conversamos con Tomás Perlberger, de EAT Catering, y miembro de A.C.E.L.G.A: “Ayer tuve cinco eventos. Vengo de acostarme a las 4 de la mañana y desayuné liviano. Tengo muchos colaboradores, tuve que aprender con el tiempo a salir de la cocina y armar equipos. En los eventos trato de que sea un momento gourmet, donde la gente descubra sabores nuevos, que se divierta comiendo y no que coma para ir a bailar. Mi propuesta es ésa, quiero que la fiesta pase por la comida. Hay varios platos de temporada: ayer saqué ojo de bife a la parrilla, que muestra que la gente está cambiando el lomo típico o la pechuga de pollo. También unos ribbs de cerdo, garrón de cordero con especias al tandori y la entrada sí es el tartán de salmón: crudo marinado con hierbas.

“La gente se abrió mucho a probar cosas nuevas, ir a comer es un programa en sí mismo. En esta época, la gente ya conoció mucho, probó algo bueno y algo malo y algunos se volvieron expertos y más exigentes. Va a estar buenísima la feria, van a estar los grandes chefs argentinos (lista completa online) presentes dando vueltas por ahí. Va a haber charlas, clínicas, clases de cocina y puestos de comida donde la gente va a comprar por menos de 35 pesos platos de los restaurantes de estos chefs”.
